Spelt (Triticum spelta) has an outer inedible husk or hull that protects it from disease, which is removed after harvesting, before milling into a fine flour that is ideal for baking – makes a delicious fine light loaf of bread!

 

Spelt is more nutritious than wheat, and although it contains as much gluten, it’s a different type of gluten that is more fragile and water soluble than wheat gluten, so is more easily digested and can often be tolerated by many who are sensitive to wheat.
